Mediterranean Salad
A simple and quick salad that is always both a family and crowd pleaser.
Make as much or as little as you like, very easy to scale up, and leftovers are great the next day.

Ingredients
2 cups cherry tomatoes
1 can chickpeas
1 cup english cucumber chopped
1 red bell pepper
½ red onion
1 cup tuscan kale (or baby spinach - any leaves really)
⅓ cup kalamata olives pitted
¼ cup feta cheese (you can omit if DF)
Dressing
¼ cup olive oil
1 garlic clove minced
1 tsp oregano, fresh
1 ½ tsp fresh chopped parsley
2 Tbs lemon juice
1 tsp maple syrup or honey
½ tsp salt & pepper to taste
2 Tbs red wine vinegar
Whisk together dressing ingredients
In large salad bowl add salad ingredients
Toss dressing through
