Tahini Dressing
Knowing how to whip up a tahini dressing is the quickest way to power up the nutrition of any salad or roast vegetable side. This tahini dressing is quite thick but can be thinned out be just adding more water or orage juice. Robust and full of flavour and easy to make once you know how. A simpler version is a combination of tahini, lemon juice, olive oil and salt. Essentially you are working to create a delicious pesto that can be drizzled or dolloped on your favourite vegetables, soups or meats to lift a dish to complete deliciousness.
What you need
1 cup tahini
8 Tbsp warm water
3- 4 tsp wholegrain dijon mustard
2 tsp sweet white miso
2 small garlic cloves minced
1 orange, juiced
Salt to taste
Blend all ingredients in food processor

a dollop on roast vegetables
dollop on cooked quinoa and grain salads
with eggs for breakfast
