Nut and Seed Salad Mix

Add a crunch to your leafy greens, and an extra serve of healthy fats, protein and minerals with this simple nutty salad topper.

This easy mix is a powerhouse of superfoods! Sesame seeds are high in magnesium, calcium, iron, zinc; Sunflower seeds are mineral rich and contain vitamin E and magnesium. Almonds are also high in magnesium, vitamin E and antioxidants.

Quick and easy to whip up at the last minute or in advance this humble nut and seed mix is incredibly versatile! Keep a jar handy for a flavour boost for your weeknight salads, steamed greens and more!

  • Sprinkle the mix over leafy green salads

  • Sprinkle over your steamed or roasted veggies with the juice from half a lemon

  • Perfect topper for your smashed avocado or poached eggs

  • Sprinkle over chopped fruit or plain yoghurt for a bit of crunch

Toasting the seeds and nuts makes their flavour rich and delicious, make a batch on the weekend so you can enjoy during the week.

Recipe

1 Cup of Sesame Seeds

1 Cup of Sunflower Seeds

1 Cup of Pepitas

1 cup of chopped mixed nuts (I like cashews or almonds)

Combine the nuts and seeds and lay out on a lined baking tray or tip into a pan over the stove - listen for the sesame seeds to pop and take off the heat.

Allow to cool (make sure it is completely cool or they will go soggy) and store in an airtight jar in the fridge to use through the week.

Note: as nuts and seeds contain plant oils it is important to store out of direct sunlight and away from heat to avoid rancidity occurring.
